I have a sweet tooth. I don’t need a lot of sugar but I always need a little bite of sweet at some point. Three weeks ago, my friends but a giant coconut macaroon! It was sooooo good! I just like the sweet coco smooth, but its full of added sugar and fat condensed milk! So I had to come up with a healthy alternative to it. Here it is. The simplest, healthiest coconut macaroons taste! Crispy and toasted out and sweet chewy center!
This recipe is gluten-free, paleo friendly, clean, and made with healthy plant based fats!
·1 scoop of vanilla protein powder
·Sweetened shredded coconut
·1/3 of liquid egg white or 1 egg white
Preheat oven to 350 degrees
In a bowl, Beat the protein powder, the egg white and then mix into the shredded coconut until well combined and thick enough to place in mini-balls.
Place on a cooking sheet and in the oven for about 10-15 minutes or until brownish.
